Spice Rubbed Ribeyes
2 tsp
  dry mustard
1 1/2 tsp
  dried oregano (lightly crushed)
1 tsp
  chilii powder
3/4 tsp
  kosher salt
1/2 tsp
  fresh cracked black pepper
  garlic cloves
  bone-in ribeyes (1 1/2 thick)
  First puree garlic cloves in food process or garlic press. Take the garlic paste and brush both sides of the steak. In a small bowl mix the spice ingredients. Then rub both sides of the ribeyes with the spice mixture and refrigerate for 30 minutes.
While the steaks are in the refrigerator its time to start your American Barbecue Systems grill. The ABS grill will allow you to cook\grill at 700 degrees with no problem. Once the charcoal has burned down grill your steaks for 6 minutes on each side for medium-rare.
Make sure to keep the top closed during grilling. This helps to controll flare ups.
  Chef Notes:
  Always make sure to let your steak rest for 7 minutes after removing from the grill. This gives the juices ample time to redistribute.
The two ribeyes will feed two couples or a family of four easily. I always cut the steaks in pieces before serving.
