Sweet Corn Vinaigrette
 
  Ingredients:

1/2 cup
  fresh corn kernels
 
1/4 cup
  red bell pepper (diced)
 
3 tbsp
  corn oil
 
3 tbsp
  white vine vinegar
 
2 tbsp
  honey
 
1 1/2 tsp
  dijon mustard
 
1 1/2 tbsp
  fresh chives (diced)
 
1/2 tsp
  kosher salt
 
1/4 tsp
  fresh cracked black pepper
   
  Directions:
   
  Whisk together the first 6 ingredientsin a small bowl until emulsified. Stir in chives; season with sath and pepper. Chill for 30 minutes before using.
   
  Chef Notes:
   
  Serve with mixed greens or spinach. This dressing also compliments all types of grilled and broiled fish.
This vinaigrette can also be used as a marinade for fish and poultry.
Always make sure to mix a double batch.
