Plum Salsa
 
  Ingredients:

1 cup
  fresh diced plums
 
1/2 cup
  fresh diced peaches
 
1 - 2
  jalapeno peppers, diced
 
1/3 cup
  red onion, diced
 
2 tbsp
  fresh curly parsley, chopped
 
2 tbsp
  fresh line juice
 
2 tbsp
  honey
 
1 tbsp
  lime zest, garnish
   
  Directions:
   
  Combine the plums, peaches, peppers, lime juice, honey and parsley in a medium mixing bowl. Toss gently to evenly blend. Cover and refrigerate for at least eight hours or even overnight. Bring to room temperature before serving. Sprinkle line zest over salsa before serving.
   
  Chef Notes:
   
  This salsa is the perfect toping for grilled fish or chicken. Bobbie & I always make a doulbe batch, this way there's alway ample for leftovers.
