Sausage and White Bean Stew

  Italian Sausage

  garlic cloves, minced
 
1/2 cup
  yellow onion, chopped
 
1/2 cup
  carrots, grated
 
1 tbsp
  fresh basil, chopped
 
3 cup
  diced tomatoes
 
2 cup
  chicken stock
 
3 cup
  white or cannellini beans
 
1 cup
  broccoli
 
1/3 cup
  parsley, chopped
 
1/2 tsp
  korsher salt
 
1/2 tsp
  fresh cracked black pepper
   
  Directions:
   
  Cook sausage over medium heat in large non-stick skillet till brown, add garlic, onion, carrots, basil, salt and pepper. Cook 5-7 minutes till onions are tender. Add tomatoes and stock, bring to a boil. Add beans and broccoli, simmer for 12-15 minutes. Finish with parsley and top with grated parmesan cheese.
