Grilled Catfish With Orange Sauce |

Start by preparing your American Barbecue Systems grill with 3-4 pounds of charcoal. Pre-heating to medium-high. Mix orange juice, sugar, soy sauce, lemon juice, garlic and pepper in a small sauce pan. Bring mixture to boil and remove from heat. Brush catfish fillets with sauce mixture. Place fillets on oiled grill racks. Grill catfish for 5-6 minutes on each side brushing frequently with sauce. This recipe pairs great with the Citrus Slaw in the recipe section. |

Chefs Note: one (1) medium orange yields 1/3 cup juice and two (2) tsp zest. One (1) medium lemon yields three (3) tbsp juice and two (2) tsp zest. Charcoal Note: I use lump charcoal; it lights easier and give you more BTU quicker. You can light 3-4 pounds of coal and it's ready to use in ten (10) minutes. Seasoning Note: You can season your catfish with salt and pepper before grilling, I just like to do it as a finishing touch. It's easy to over salt fish.
