Amount
  Item

1 lb
hickory smoked bacon, chopped 1/2 inch pieces

1
  large onion, chopped

1/2 cup
  cider vinegar

1/2 cup
  dark brown sugar, packed

1 1/2 cups
  chicken broth

1/2 cup
  ketchup

8 ounces
chipolte peppers in adobo sauce, seeded and minced

  Directions:

In a large cast iron pot, cook the diced bacon over medium heat till crispy. Remove bacon, leaving the grease. Add onions and cook till tender, about 5-6 minutes. Deglaze the pan with the vinegar, add brown sugar, broth and ketchup. Stir till all ingridients are thoroughly incorporated, add the minced peppers and simmer till thickened. Add the bacon pieces back to the mixture and serve warm.

  Chef Notes:

I enjoy serving this sauce with pork and brisket sandwiches. Talk about comfort food, this sweet and smoky sauce falls in that class. Just remember, bacon makes everything better.
