Grilled Orange Glazed Salmon
  4 ounce salmon fillets
1/3 cup
  orange marmalade
1/2 cuo
  fresh orange juice
1 tbsp
  dijon mustard
2 tsp
  fresh ginger, grated
1 tsp
  orange zest
1 tsp
  kosher salt
  Rinse salmon fillet under cold water and pat dry with paper towel. Place fillets in a large zip-lock bag: set aside. In a small bowl stir together remaining ingredients. Pour into zip-lock bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours. Remove salmon from refrigerator 15 minutes before grilling. Remove salmon from the marinade and place on sheet pan, letting excess marinade run off. Place on preheat ABS smoker\grill on medium heat for 6 minutes on each side. On most ABS grills this grilling process only takes 3 pounds of lump charcoal. Remove salmon and let 5 minutes before serving. It's very easy to over good salmon, 12 minutes is ample time for a thoroughly cooked salmon.
  Chef Notes:
  I like to serve my salmon with a side of the glaze, so make sure to double the batch and reserve half. This recipe goes great with grilled sweet potatoes. The sweet potatoes have just the right touch of sweetness.
The potatoes can be grilled at the same time as the salmon.
