Spicy Chili Rub
 
  Ingredients:

1 tbsp
  fresh cracked black pepper
 
2 tsp
  cayenne pepper
 
2 tbsp
  chili powder
 
2 tbsp
  cumin, ground
 
2 tbsp
  dark brown sugar
 
1 tbsp
  oregano, ground
 
2 tbsp
  paprika
 
2 tbsp
  kosher salt
 
1 tbsp
  granulated sugar
 
1 tbsp
  white pepper
   
  Directions:
   
  Mix all ingredients in a small bowl. Store in cool dark location.
   
  Chef Notes:
   
  This blend works great on all cuts of pork. I like to season and return the cut of meat back to the refrigerator for and hour before smoking or grilling. This gives the seasoning time to penetrate the skin. Remove from the refrigerator on place immediately on the smoker or grill.
Note: I like to store my seasoning in old spice bottles I've saved. I then place them in a cabinet or drawer for storage.
