Bobbie's Dirty Rice
1/2 lb
  spicy sausage
1 tbsp
  olive oil
1/2 cup
  onion, diced
1/4 cup
  celery, diced
1/4 cup
  red bell pepper, diced
2 tbsp
  garlic, minced
1 1/2 cup
  white rice, converted
3 cup
  vegetable stock
  bay leafs
1/2 tsp
  cayenne pepper
1/2 tsp
  kosher salt
3/4 cup
  scallions, chopped
  Using a large skillet saute sausage in the olive oil over medium heat for 3 minutes. Add onions, celery, bell pepper, and garlic. Cook until tender, about 3 - 4 minutes. Add cook and saute for 2 additional minutes. Then add stock, bay leafs and seasonings, bring to a boil. Cover and simmer for 25 minutes. Let stand for 10 minutes, fluff with a fork and stir in scallions.
  Chef Notes:
  Always check the seasoning before serving. In most cases the rice with need additional salt. I always use spicy Italian sausage when cooking this recipe. I buy links and cut them out of the casting. Normally each link weighs about 1/4 lb.
