Directions: |

Saute onion in oil over medium heat until softened, about 4 minutes. Stir in fresh garlic and cook 1 minute. Deglaze pan with vinegar and bring to a boil. Add remaining ingredients stirring to incorporate and simmer for 10 minutes or until slightly thickened. |

This recipe calls for the big cast iron skillet. This helps when it comes to simmering. We know that cast iron distributes heat evenly, which is important when it comes to thickening. Make sure not too use to much heat when simmering, it will thicken your recipe to fast making it sticky and starchy like. It's better to add a couple minutes to the cooking process.
