Mississippi Mud Cake

  vegetable oil

  granulated sugar
 
1 1/2 cup
  self risinig flour
 
1/3 cup
  cocoa

  large eggs
 
3 tsp
  vanilla
 
1 cup
  toasted pecan
 
1 lb
  bag miniature marshmallows
 
Icing
 
 
1 1/2
  sticks margarine
 
1/3 cup
  cocoa
 
1 tsp
  vanilla
 
1 lb
  powdered sugar
 
1/4 cup
  whole milk
 
1 cup
  toasted pecan
   
  Directions:
   
  In a large mixing bowl add sugar, flour and cocoa stiring till thoroughly incorporate. Add eggs, vanilla and vegetable oil mixing for 45 seconds by hand. Fold in nuts, pour into lightly greased 9 X 13 pan. Baking in preheated 300 degree oven for 45 minutes. Once the cake has been removed from the oven cover the top with marshmallows.
The icing recipe needs to be made durning the last 10 minutes of baking. In a medium sauce pan add milk and margarine, heating till margarine is melted. Blend in sugar and cocoa till dissolved. Add the remaining ingredients and cook for 3 minutes. Pour over cake and let set for 45 minutes.
